What is Skyr?
If you haven’t seen skyr on your store shelves, it is a dairy product high in protein, and is referred to as Icelandic yogurt. Icelandic Provisions is the only skyr made in the U.S. that uses an original Icelandic recipe and heirloom Icelandic skyr cultures. How to Make an Apple Pie Smoothie
Sauté the peeled, cubed apples in a combination of butter and avocado or sunflower oil. Stir in the Icelandic Provisions Low Fat Skyr, ground cinnamon, ginger powder, pinch of ground nutmeg, and a little honey or maple syrup, almond extract, and lemon juice until hot.
Puree in a blender into a creamy hot smoothie. Serve steamy in a mug. Then top with an optional dollop of Icelandic Provisions Vanilla Skyr and a dusting of cinnamon. Serve with a store-bought or bakery-made almond biscotti for a “pie crust” effect!
Ingredients
- 1 1/2 teaspoons unsalted butter
- 1 1/2 teaspoons avocado oil or sunflower oil
- 3 medium Pink Lady apples or apples of choice, peeled, cored, and cubed (about 3¼ cups cubed)
- 2 (5.3 ounce) containers Icelandic Provisions Low Fat Skyr
- 2 teaspoons honey or maple syrup
- 1 teaspoon lemon juice
- 1/8 teaspoon pure almond extract
- 1/4 teaspoon ground cinnamon, or to taste
- 1/8 teaspoon teaspoon ginger powder, or to taste
- pinch ground nutmeg
- pinch sea salt
- 2 tablespoons 2 tablespoons Icelandic Provisions Extra Creamy Vanilla Bean Skyr (optional)
- 2 store-bought or bakery-made almond biscotti (optional)
Directions

In a large saucepan, heat the butter and oil over medium. Stir in the apples, cover, and cook until the apples are softened and turn lightly golden brown, stirring a couple times, about 14 minutes.
Uncover, stir in the Icelandic Provisions Low Fat Skyr, honey, lemon juice, almond extract, ground cinnamon, ginger, nutmeg, salt, and cook while stirring until the skyr mixture is heated through, about 1 minute.
Add the apple-skyr mixture to a blender and puree into an extra creamy hot smoothie, at least 1 minute. If needed, gently reheat in a clean saucepan.
Serve hot, ideally in glass coffee or Irish coffee mugs. If desired, dollop with the Icelandic Provisions Extra Creamy Vanilla Bean Skyr and a dusting of cinnamon, and pair with almond biscotti (for a “pie crust” effect). Enjoy as a snack or dessert.
Note: For a thinner smoothie consistency, add unsweetened 100% apple juice or milk (or milk alternative) by the tablespoon during pureeing.
